– about 20 cookies –
Christmas is all about spending time with family and loved ones. And about enjoying lots of great food together! Making these Christmas cookies is perfect entertainment for all ages. Just prepare the dough and then have endless fun using cookie shapes. Once the cookies are baked and have cooled down decorate them with melted chocolate, a truly festive treat!
The cookies turn out crispy through a combination of almond meal, oat flour and cold butter. The ginger bread spice creates the typical festive aroma.
- Preheat the oven to 170 degrees (hot air oven) and line a baking tray with baking paper.
- Cut the cold butter into small pieces and mix with all other ingredients in a large bowl. Knead a dough using your hands. This can take a few minutes. Then form into a ball. Put into the fridge for 30 minutes (this will allow the dough to roll out more easily).
- Take the dough ball out of the fridge and spread some oat flour on an even surface. Roll out the dough (about 0.5 cm thick) using a rolling pin. Use Christmas cookie shapes to make the cookies. Bake for 12 minutes.
- Allow cookies to cool.
- Break chocolate in pieces and melt ‘au bain marie’ (in a metal or heat resistant glass bowl over simmering water, make sure water does not touch the bowl) frequently stirring with spoon. Decorate the cookies with melted chocolate.
