Tinned tomatoes are the perfect ingredient for an easy last-minute soup. It’s very convenient to keep some in the cupboard for quick dinner solutions. This simple soup recipe is much more nutritious than any additive loaded supermarket version.
Especially cooked tomatoes contain high amounts of the powerful component lycopene, a superstar of food substances, responsible for the bright red tomato colour. Lycopene can boost immunity and can protect eyes and skin. The added garlic can act as a natural antibiotic and can help against colds and bacterial infections.
Required tools: Hand-held blender
- Dry roast pine nuts in pan on medium heat until golden brown, set aside.
- Chop the onions and garlic, melt butter in a soup pan, then add onions and garlic, fry on medium heat for a few minutes.
- Add tinned tomatoes, water, oregano, pepper and salt and bring to boil for 1 minute, turn off heat and blend using a handheld blender.
- Serve with pouring cream, sprinkle with pine nuts and basil leaves.
